Avocado Breakfast Bowl

An avocado a day keeps the doctor away, right? We think so!! Getting creative with your favorite Keto foods is KEY to forever enjoying them, especially avocados! Using avocados as a vessel for other delicious foods is our latest concoction!

Avocado breakfast bowl

Ingredients

  • 4 slices thick-cut Bacon
  • 2 Free Range Eggs
  • 1 tbsp grass-fed butter
  • Splash of half and half
  • Salt + pepper to taste
  • 1/4 cup shredded cheddar cheese
  • 1 whole Avocado sliced in half, remove peel and pit

Instructions

  1. Melt butter in a frying pan
  2. Whisk together eggs, half n half, and salt + pepper
  3. Add eggs to the pan and stir as they scramble
  4. Fry bacon in a separate pan
  5. Once cooked, crumble into pieces
  6. Add meat and cheese to scrambled eggs
  7. Scoop out a portion of the inside of avocado creating a “bowl”
  8. Fill with egg/meat mixture
  9. Top with more cheese and meat crumbles.
