Prime Rib

Ingredients

  • 1, 4 – 6lb grass-fed beef rib roast (bone optional)
  • 1 packet BETTER//BROTH™ Keto Thyme
  • 2 tsp sea salt
  • 2 tsp cracked black pepper
  • 10 fresh garlic cloves

Prep Instructions

  1. Allow roast to sit at room temperature for at least one hour.
  2. Make 10 small, random slits in roast
  3. Place fresh garlic cloves into slices.
  4. Mix together salt, pepper, and BETTER//BROTH™ Keto Thyme and rub roast with. This can be done the night before as well.

Cooking Instructions

  1. Preheat your oven to 450 degrees
  2. Place the roast in a roasting pan bone side down.
If boneless use a roasting rack and place fat side up.
  3. Cook the roast for 15 minutes, then reduces the oven temperature to 325 degrees.
  4. Continue to cook for about 15 minutes per pound.
  5. If using a meat thermometer, medium rare: 130-140 degrees, medium 145-155 degrees.
  6. The roast will continue to cook when removed from the oven, increasing about 5 degrees in temperature. When the desired temperature is reached, remove the roast from the oven and let sit 15-20 minutes before carving.
