With the sun FINALLY shining, and Spring making its delayed entry, we’re fully embracing National Shrimp Scampi Day! Keto friendly and utilizing our BETTER//BROTH™ Keto Thyme, these buttery garlic shrimp are great on their own in the sauce or served over zucchini noodles.
1 lb, raw Shrimp, shelled & deveined
2 tbsp olive oil
2-3 tbsp butter
3-4 cloves garlic, chopped
1 packet BETTER//BROTH™ Keto Thyme
1 cup water
2 tbsp parsley, finely chopped
1 tbsp lemon juice
Salt & pepper to taste
1. Over medium heat, melt butter in olive oil
2. Add in garlic and sauté until soft
a. Make sure to not burn the garlic!
3. Add in Shrimp and ½ cup of BETTER//BROTH™ Keto Thyme
4. Increase heat to bring liquid to a boil
5. Cook shrimp 2 minutes, flip over, cook another 2 minutes
a. Shrimp will be pink all over when cooked thoroughly and properly
6. Remove pan from heat, add in parsley, lemon juice, and salt & pepper.
7. Toss shrimp to coat evenly in this heavenly goodness
