An avocado a day keeps the doctor away, right? We think so!! Getting creative with your favorite Keto foods is KEY to forever enjoying them, especially avocados! Using avocados as a vessel for other delicious foods is our latest concoction!
Avocado breakfast bowl
Ingredients
- 4 slices thick-cut Bacon
- 2 Free Range Eggs
- 1 tbsp grass-fed butter
- Splash of half and half
- Salt + pepper to taste
- 1/4 cup shredded cheddar cheese
- 1 whole Avocado sliced in half, remove peel and pit
Instructions
- Melt butter in a frying pan
- Whisk together eggs, half n half, and salt + pepper
- Add eggs to the pan and stir as they scramble
- Fry bacon in a separate pan
- Once cooked, crumble into pieces
- Add meat and cheese to scrambled eggs
- Scoop out a portion of the inside of avocado creating a “bowl”
- Fill with egg/meat mixture
- Top with more cheese and meat crumbles.
