Soup is good for the soul, and our Chicken Curry Soup is BETTER for the soul! This is perfect for cuddling up on the couch with a good book on a chilly Autumn evening!
Chicken Curry Soup
Makes 6 servings
Ingredients:
1 tbsp coconut oil
3 cups chicken bone broth
1 13.5oz can full fat unsweetened coconut milk
3/4 cup chopped green onions
1 tbsp curry powder
1 tbsp minced peeled fresh ginger
1packet BETTER//BROTH™ Coconut Curry
3 cups shredded cooked chicken
6 oz baby spinach leaves
3 tbsp fresh lime juice
1/4 cup chopped fresh cilantro
Instructions:
1. Heat coconut oil in pan over medium-high heat.
2. Add green onions, curry powder, lime juice, and ginger to pan.
3. Sauté 1 minute, stirring constantly.
4. Add chicken bone broth and bring to a boil.
5. Add coconut milk and chicken and reduce heat
6. Simmer for 10 minutes.
7. Add Spinach and cook until spinach wilts (2-3 minutes.)
8. Remove from heat and stir in fresh chopped cilantro and BETTER//BROTH™ Coconut Curry.
9. ENJOY!

You could use our BETTER//BROTH™ Keto Thyme or keep it curry with some curry paste!
