Gingerbread? In Summer?! YES!! Its National Gingerbread Day and we are in HEAVEN! The warm, spicy aroma wafting from these tasty Keto treats is everything your late afternoon needs. Pair these cookies with a cold glass of your favorite milk and enjoy!
1 cup Almond Flour
1/4 cup Coconut Flour
1/2 tbsp Cinnamon
1 tsp Ground ginger
1/8 tsp Ground cloves
1/8 tsp Nutmeg
1/4 tsp Baking powder
1/2 cup Erythritol
1/2 cup Butter, softened
1/2 tsp Vanilla extract
Combine almond flour, coconut flour, cinnamon, ground ginger, ground cloves, nutmeg, and baking powder. Set aside.
In a large mixing bowl, beat the butter and erythritol for 1-2 minutes, until fluffy.
Add egg and vanilla extract.
Slowly add in the flour mixture until a dough forms.
Chill dough in refrigerator for an hour.
Roll dough out to 1/4″ thickness.
Use a cookie cutter to cut out cookie shapes and transfer to a parchment lined baking sheet.
Bake at 350 for 10-15 minutes, until golden brown.
