National Macaroni Day

MMMMM Macaroni Salad! This dish hits all the right notes and is perfect for supporting grilled chicken or as a main dish itself! Be advised, it’ll go quick at gatherings; you might want to make extra?

Keto Macaroni Salad


  • 2 cups raw cauliflower, broken into very small pieces
  • 1/4 cup Mayonnaise
  • 1 tsp Sugar substitute
  • 1 tsp cider vinegar
  • 1 pack MCT//143™
  • 1 tsp. of salt
  • 1/2 tsp. of pepper
  • 1 tbsp Dijon mustard
  • 4 tbsp of thinly sliced celery
  • 1/4 cup of chopped bell pepper
  • 1/4 cup of chopped onion
  • 1 tsp of grated carrot
  • 1/4 cup chopped black olives


  1. Steam cauliflower, make sure not to over cook.
  2. Combine mayonnaise, mustard, vinegar, MCT//143™, salt, pepper, and sweetener. Mix well.
  3. In a separate bowl, combine cauliflower, celery, carrot, onion, peppers, and olives.
  4. Pour mayonnaise mixture over and combine gently.
  5. Chill before serving.
